this is one of those recipes that you will want to keep forever. hand-write it on an index card and pass down to your children.
chicken salad is one of those classic recipes, and i’m sure there are about 100+ variations out there. but this one is by far our favorite. it’s super simple and has a lot of flavor and crunch. it involves making a homemade dressing to hold it all together, but don’t worry, it’s super quick and so, so easy!
this is all you need to make the filling: shredded cooked chicken, red seedless grapes sliced in half, sliced celery, and slivered almonds. i just buy those linked ones via amazon prime a few days in advance. (aff links) easy, right?
and for the dressing, you’ll just need miracle whip, mayo, mrs. dash original seasoning, garlic powder, and salt. mix it all together. simple!
now just mix (here’s some awesome mixing bowls [aff link]) the filling with the dressing and give it a stir – and you’ve got the makings of a fabulous lunch or dinner that everyone will love!
the last thing you’ll need is something to hold it all in a sandwich – some nice bread, your favorite rolls, or my personal favorite – croissants!! if you have to pick just one, go with croissants. though, i have to tell you that since moving i have been unable to find a croissant that i like – the ones i got in canada came frozen in a box, defrosted for a few hours on my countertop and then baked in my own oven. they were the best croissants ever!!! oh, how i miss them. but in a pinch, you could go to your local bakery and maybe they’d have these little cuties:
cut your bread/roll/croissant in half, pile on some of this chicken salad, and voila! dinner (or lunch) is served. and your family will thank you. and you will be so happy that you made this fabulously easy and delicious recipe.

Printchicken salad sandwiches
Ingredients
- 2 cups cooked chicken, shredded
- 1 1/2 cups red
grapes, halved - 2 cups chopped celery
- 1/2 cup slivered almonds
- 1/2 cup miracle whip
- 2/3 cup mayo
- 1/2 teaspoon Mrs. Dash Original Seasoning
- 1/8 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- to make the filling, mix together in a large bowl the chicken, grapes, celery, and almonds.
- to make the dressing, whisk together in a small bowl the miracle whip, mayo, seasoning, garlic powder, and salt.
- add dressing to the filling and stir to combine.
- *if possible, refrigerate for 1-2 hours before serving, adding the almonds just before serving.
- serve on top of your favorite bread, roll, or croissant. enjoy!

I didn’t have any mayo and I went heavier on the seasonings, but either way this chicken salad is amazing!!! I had someone make this before and attempted it on my own but didn’t know how it was suppose to be seasoned. Now I’ve got it right and can devour this deliciousness like a fiend!

Hi Reen! That’s a great question! I’ve never had to think about it before because these have always been available here. You could just use mayonnaise instead of miracle whip, or I know there are recipes out there for homemade miracle whip – just a quick google search will help you find one that you like if you decide to go that route. For Mrs. Dash seasoning, I came across this site: http://housewifehowtos.com/cook/recipe-make-your-own-mrs-dash-season-salt-and-old-bay/ – and the author of this blog made her own version. You can get miracle whip in Australia, however, do not use it as it does not taste the same as the American kind. I’m an American living in Australia and I took one taste of the miracle whip here and threw it in the trash. I would hate for someone to ruin a great recipe by using it. 🙂 I luckily I get the American kind shipped in.

I need about 50 sandwiches. Thinking of using a rotiesserie chicken, this should be enough, but if you could suggest the amounts to increase the other ingredients I would really be grateful. Hi Andrea! I’ve never made these for that many people before! But I think it’s safe to say that if you just multiply all the ingredients by the same number it will turn out just as great 🙂 so this single recipe makes about 4-6 sandwiches for me, depending on how full i fill them and how big the rolls/croissants are. So you could multiply all the ingredients by 10-12 to get around 50 sandwiches?

The dressing she has in the recipe is great. Sometimes I enjoy something a little more fruity, especially in the summer. Try taking mayo, sugar, and some mandarine orange juice (from a can) and mix it together. I also mash up some of the oranges in the dressing as well. I don’t use measurements just do little by little until until the mixture resembles dressing. I usually make a pretty good sized batch, and I generally start with a cup of mayo and go from there. Also I mix in some canned pineapple juice with crushed pineapples when I have them. Again, moderation and frequent tasting is a must!
