zuppa toscana (kale, sausage, and potato soup)

Ingredients

Scale
  • 3 cans (14oz each) chicken broth
  • 2 cups whipping cream
  • 1/4 teaspoon red pepper flakes (optional)
  • salt and pepper
  • 1 small onion, diced and sauteed in 1 tablespoon butter
  • 1/2 to 1 package bacon, cooked and crumbled
  • 1lb mild bulk italian sausage, browned
  • 4 to 5 cups chopped kale
  • 4 to 5 small potatoes, scrubbed and cut into slices (leave the skins on!)

Instructions

  1. put everything except for the kale and potatoes together in a large slow cooker and cook on high for 3-4 hours, or on low for 5-6 hours. add the kale and potatoes for the last 40-60 minutes.
