- brownies ::
- 10 tablespoons softened butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/3 cup cocoa powder
- 1/2 cup flour
- 1/2 cup chopped walnuts (optional)
- mint frosting layer ::
- 1 cup powdered sugar, sifted
- 2 tablespoons softened butter
- 1 tablespoon milk
- 1/2 teaspoon peppermint extract
- a few drops of green food coloring
- chocolate icing layer ::
- 1 cup powdered sugar, sifted
- 2 tablespoons butter, melted
- 3 tablespoons cocoa powder
- 2 tablespoons milk
Instructions
- to make the brownies ::
- place all the brownie ingredients in a large bowl and mix well. spread into a greased 8″x8″ pan. bake at 350F for 25-30 minutes. once cool to the touch, place in the fridge to cool completely.
- to make the mint icing ::
- beat together all the ingredients and spread over cooled brownies. chill in the fridge for approximately 10 minutes, until icing has cooled and set.
- to make the chocolate icing ::
- beat together all the ingredients and spead over the mint frosting. let chill in the fridge before cutting into squares.
- optional :: to make them even mintier and chocolatier, top with chopped andes mints or chopped mint oreos. yum!
